Title: Feta Cheese & Chopped Tomato Dip

Yield: 1 Servings

1/2lbFeta cheese; crumbled
1/4cRed onion; finely chopped
1/4cParsley; finely chopped
1/2tsOregano
1/2tsThyme
1/2tsPepper; finely ground
2tbOlive oil
2mdTomatoes; seeded and chopped
  Pita chips or crackers

Combine all ingredients except chips or crackers. Refrigerate several hours. Serve on toasted Pita chips or crackers. Makes about 4 cups.

Toasted Pita Chips: Split & toast 6 Pita breads. Break into chips.
